Classic seafood basket with battered flathead fillets, salt and pepper squid, salt and pepper prawns, served with wedges.

Ingredients

300g mayonnaise
10g ground lemon myrtle
20g finely chopped baby capers
30g finely chopped gherkins
6g chopped parsley
500g battered prawns
1kg frozen I&J South American Crispy Battered Flathead Fillets
600g frozen I&J Classic Salt & Pepper Squid
2kg frozen Edgell Supa Crunch Battered Wedges
Lemon wedges, to serve

Instructions:

Step 1

Combine mayonnaise, lemon myrtle, capers, gherkins and parsley. Season to taste.

Step 2

Cook prawns, I&J Fish, I&J Squid and Edgell Wedges following packet directions.

Step 3

Serve with lemon myrtle tartare and lemon wedges.
